    Yup, you guessed right–those are pickled carrots (more on that later! This is one of my favorite breakfast sandwiches to make on days when I go on long bike rides. The flavors from the sriracha mayo, bacon, pickled carrots, and bun all marry well together. It’s so delicious!

    • I hope you’re ready for this one! Oh, and don’t be deterred by the pickled carrots, they pair well with the saltiness of the bacon.     Instructions

    1. Cook bacon according to package. Once cooked, place on paper towel to remove excess fat, fold in half, and set aside.
    2. In a small ramekin, mix mayonnaise and sriracha until well combined. Set aside.
    3. Toast brioche bun. Spread sriracha on both sides of the bun. Add bacon, layer carrots and add top bun.
