Creamy Cilantro Dressing

  • ½ cup full-fat yogurt
  • 1 bunch cilantro, leaves only
  • 1 small shallot, peeled
  • 2 cloves of garlic
  • 1 tsp maple syrup (optional)
  • ½ tsp kosher salt
  • ¼ cup good quality olive oil (I use Brightland Alive)
  • 3 tbsp lime juice
  • 1 jalapeno deseeded

Salad Ingredients

  • Avocado
  • Grape tomatoes
  • Butter lettuce
  • Black Beans
  • Roasted Corn
  • Chicken marinated in lemon + salt and pepper
  • Lime Squeeze
  • Paqui Salsa Verde tortilla chips


  1. Add all ingredients to a blender or food processor and blend until you reach your desired consistency. Texture should be thick.

With a quick zip of the blender, this goodness is ready to pour on just about anything. But, as I say with a few of my recipes, some foods taste better with time. So if you can, whip this up in the morning and visit it again at lunch or dinner, you'll notice a difference in taste–enjoy!
