Herby Mignonette Sauce

Ingredients

  • ¼ cup + 1 tablespoon rice vinegar
  • ¼ cup white wine vinegar
  • 2 tablespoons flat leaf parsley, finely chopped
  • 1 tablespoon cilantro, finely chopped
  • ¼ cup shallots, finely chopped
  • ¼ teaspoon kosher salt, + more to taste if needed
  • ¼ teaspoon sugar
  • 1 teaspoon white pepper, freshly ground with mortar & pestle

For Serving

  • lemon for squeezing
  • horseradish

Instructions

  1. Add all ingredients to a bowl and refrigerate for 2-4 hours.
  2. Add preferred amount of mignonette sauce on each oyster and add a squeeze of lemon and a whisper of horseradish.
